How to Dry Walnut Leaves? How to Make Walnut Leaf Tea? What are the Benefits of Walnut Leaf Tea?
In mid-July, we gather the walnut leaves and leave them to dry in a cool, shaded area away from direct sunlight. Once the leaves are dry, we crumble them by hand and store them in a glass jar in a cool place. Walnut leaf tea is suitable for use both in summer and winter.
Preparation:
We take half a tablespoon of the dried walnut leaves from the jar and put it into a pot. We add boiling water and let it steep for about 10 minutes with the lid on. After steeping, we strain the tea into a cup. We drink our walnut leaf tea slowly in sips, without using any sweeteners.
I made ice cream to go along with our walnut leaf tea.
I made chocolate ice cream using a mixture of buffalo and cow’s milk that I got from the village. I topped it with walnuts and hazelnuts gathered from the garden. Here’s how you can make the ice cream using regular milk from the store.
We put 1 liter of milk in a saucepan and heat it over high heat until it reaches the temperature to melt the sugar. (For the milk obtained from the village, we boil it completely and wait until it cools down to the temperature where it can melt the sugar. This is because it is not pasteurized. We want to ensure that any potential bacteria in raw milk won’t transfer to us.)
Once the milk reaches the temperature to dissolve and melt the sugar, we add 1 and a half cups of granulated sugar and stir. After the sugar has dissolved in the milk, we add 1 packet of whipped cream powder and mix it using a hand blender.
We continue mixing while adding 1 packet (25g) of cocoa powder used for pastries and cakes, blending until fully incorporated. The mixture, now resembling whipped cream, will be slightly foamy.
